Honey vs Sugar (sneak peak, honey is SCD approved)

Hey gang, I recently did a dive into honey to learn why it is SCD approved while most other forms of sugar are not. Here is a fun video I made on the subject which gets into the science and mostly makes 30 year old pop culture references. https://youtu.be/rWULNg7zTb0

Here's the un-entertaining short answer:
The sugar molecules in honey exist as monosaccharides (single sugar molecules) that don't require digestion by your gut for your body to begin making use of them. Table sugar on the other hand is a disaccharide (two sugars bonded together) that you need to break apart to make use of. If they are not broken apart, then they can go undigested and feed unfriendly bacteria in our guts and thus cause inflammation. Therefore honey is SCD friendly because it is a type of carb that doesn't require as much complex digestion which is pretty much the entire goal of the diet.
