Food (in)tolerance fluctuations

I'm being frustrated by food tolerance fluctuations, food (a) works for a time but suddenly becomes intolerable. My choices of food is becoming smaller and smaller, the foods I can comfortably eat changes week to week.

Yup, this is the bane of my existence. Have you ever done a food journal? I found that was a huge help when I first got sick, and diagnosed. I've actually gotten really lucky a few times though where I ate somthing on my never eat list and was fine.

I can relate to this.  I've had to learn what foods give me problems, and along the way have learned to use that information to gauge my current digestive health.  Some foods I can tolerate well pretty much all the time, some pretty much always cause at least a little reaction.  And there are a few that, like you say, were no problem last month but now cause my system to flush either a little or a lot.  If I'm really in bad shape, even water causes gut pain and passes right through me as if I was doing a pre-colonoscopy cleanse.
