Chicken Soup for Bad days, Recipe 2

Here is another great chicken soup recipe when your gut is off.  From the IBSgroup.org IBD section.  Enjoy.

Mr. O’s Chicken Soup+ for bad days.

Get a good whole chicken,
preferably free-range, organic.
Put water in big saucepan.
Put chicken (already cleaned!) in pan,
with water covering.

Add 2 leeks, 2 celery, 2 carrots, l full onion
(could be inside chicken) and
2 cloves, 2 bayleaves, pinch or two of dry thyme,
1 chicken bouillon cube (Knorr is good) ...important this.

Boil water then put on simmer for 45 minutes.
Remove scum every so often.
It already smells so good that
even if you can't eat a thing, you will want to eat this.

Ground the chicken to almost a liquid,
just to get some protein inside of you.
Do not eat the vegetables. They were for the taste.
You can eat them when you feel better, in moderation,
but bear in mind, they lose their goodness after a while.

Put in fridge what you don’t eat.

The next day, first remove the layer of fat.
You'll be surprised how much there is.
Cook only what you want to eat. Leave rest in fridge.

Next meal, remove any more fat left.
Revitalize by adding a little water to the soup,
and adding some more of the Knorr chicken cube.
