Need SCD Recipe Bread

Wed, February 16, 2011 7:37 PM

Does anyone bakes SCD bread?  I make the sandwich bread as found in Breaking the Viscious cycle, but my son is getting sick of this bread.  There is a Melba Toast Bread that looks good from Digestive wellness website.  Please, please send your SCD Recipes.

Thank you,

Matthew's mom

I haven't found a good recipe for bread but I make cheese crackers as a substitute. Mix Almond flour with two or three tablespoons of grated parmesan and a little salt. Add a little cold water to make a dough like slightly sticky pastry. Roll and cut into rounds then roll each one a bit more and bake in  a fairly hot oven for  20 minutes until golden but not brown. All the almond baking seems to burn very easily. They last a few days and can be rewarmed to make them crisper.

I also separate the eggs in the cake and muffin recipes and then whisk the whites before adding them at the end. It gives a much lighter texture.
