Coconut Oil

I bought Coconut Oil and it was solid, I also leave it in  my cupboard. I live in North Carolina. It is not too hot here yet but noticed the other day the oil now became liquid. Does that mean it turned rancid or bad? If I leave it in the fridge and need some it is hard as a rock and you can't get any out.

What does everyone else do?

I just wanted to know how long it took all of you to notice a difference with the SCD diet. I tried the SCD diet for three months and I saw very little to any results. I actually flared really bad while on it and I discontinued the diet. Any suggestions on how long it takes to see results. I want to give this diet a shot again.I know how to do my own yogurt and cook all the breads and foods. What is the key to success with this diet? I really want to heal form this disease. FYI, I am 26 year old female with left-sided Ulcerative colitis, and have tried all of the medications in the market with no success. Any suggestions will be greatly appreciated.

I was REALLY nervous about giving up grains as I was TOTALLY addicted to pasta and popcorn (literally probably made up 50% of my diet if not more).  I struggled the first few weeks with cravings, but it was easy to stay on the diet since my symptoms (blood, mucus, frequency) went away only three days into the diet.  Also, my energy levels are SO much higher than they were. 

I would recommend a couple of resources if you are going to try it.  First, by the SCD lifestyle guides- they have great tips for phasing the diet, and for "cheats" to make all the prep work easier.  Second, I LOVE a blog called Against All Grain (www.againstallgrain.com).  The author is a young woman with Ulcerative Colitis, who is on a modified version of SCD.  She posts the most delicious recipes, and the photos are incredibly mouth watering!  I have made a lot of her stuff, and it is awesome. 

If you decide to go for it, let me know and I will send you a list of my favorite SCD cookbooks too! 

I was so scared to start this diet, but I really can't express enough how much better I feel!

Yeah, I've heard of the SCD diet, but I'm nervous about it because of the no wheat or bread. I'd like to give it a try though, I'm willing to try anything now, I really do not want to still be having a bad flare for my wedding and honeymoon...

I saw in another thread that you are really worried about flaring and your wedding- I was at the end of a flare on my wedding day, and looking back I wish I knew then what I know now about SCD!!!

I have colitis, but yeah, I just researched it, and I think I'll try it. My doctor is telling me all my flare-ups are normal, it doesn't feel normal, but I don't know if I should bother with a second opinion right now.

The Coconut Oil is used on the SCD Diet. It is a good fat so I use it for cooking or putting a little in my pan to sautee etc. You can also put a little in a smoothie.
Google SCD Diet or www.Crohnsdad.com if you have Crohns. A lot of great information on that site.

I keep mine in the refrigerator, too, for space reasons, and it's kind of a pain to use. It's not dangerous to store in warmer temperatures at all - I think it's supposed to be stored at room temp. Coconut oil just becomes liquid at around 75 degrees and that's normal. I understand that storing it as a liquid may reduce the shelf life slightly, from what I've read, but it's not rancid unless you notice that the smell is acrid or off, and then you should probably not use it.
